Having been surprised at some of the answers on pool attire and etiquette, I'm rethinking my packing and wonder if I had figured too casual for the port visits. What is considered appropriate. I don't usually wear shorts, but wondered if casual knit dresses or cotton pants or too casual?

That totally depends on the destination, of course, but if you'll be in hot-weather areas your suggestions sound fine for day-time.
Slacks, t-tops, light-weight blouses, sun-dresses all are customary.
Please do remember that visiting some churches your knees---and possibly upper arms---should be covered.
Now, in Alaska or the Arctic/Antarctic regions the above advice does not (usually) apply!

In the warm weather areas, I wear bermudas for the morning and afternoon. Then in the evening I dress according to what the dress code suggests.
In cold weather areas, I wear slacks during the day time.

I wear shorts, tank tops, and flip flops on shore in Mexico and the Caribbean.

In the Caribbean, I wear capri pants ashore rather than shorts.
I don't wear rubber flip flop things but prefer a Clarks sort of sandal...slip on open shoes.
I often wear sundresses when we go into port. The pretty cotton/jersey floral print sleeveless dresses are so comfortable and attractive IMO

My wife wears shorts, much to my liking. She has a great pair of legs and still looks fantastic. I am glad she doesn't cover them up with pants and those pants the ladies call capris. :)
It is very hot on some of the islands and I also wear shorts.
RuthC made a good point about visiting churches. My wife brings along one of those big scarfes (sorry but I don't know what they are called) and wraps it around her waist if we visit a church.
Best advice is dress to be cool and comforatable. The fashion police will not arrest you.
