is there a cruise line with the amenities of Crystal or Seabourne, but without the need to dress formally for dinner?

Unfortunately, there are no cruise lines that compare to either line you mentioned, but if you want casual, and something that's a little more upscale, try Oceania or Windstar. Those are both country club casual, but they aren't close to either Seabourn or Crystal in terms of spectacular food and service, but they aren't mass market lines either.
