Can we leave to go shopping instead of waiting with others to re-board? I understand that the ship has to have a zero count. I figure we could go to the beach for a walk and go get more wine during that hour or 2.

You can do whatever you like on your day in Ft. Lauderdale. We are doing a b-2-b out of FLL from Oct 9 through Oct 29. We will be back in FLL on the 19th for the second leg of our cruise, and plan to spend that day with our friends who live in nearby Delray Beach. They are driving over to pick us up at the terminal.
You can grab a cab & go over to Total Wine and replenish your supply. It's not too far from the port. We will be doing likewise on our day in port. :)

The day before the end of your first cruise you will get a letter indicating the procedures for the next day.
If there are only a few "Intransit" passengers they will have your name on a list. So as to not cause any problems the next day, you need to go to the front office and tell them that you wish to leave the ship earlier than the time listed in the letter beacuse you want to go to the beach and do some shopping.
Just be certain that you have your ID card with you as well as your passport as you will still be required to go through immigration. You may also be required to fill out a customs form.
Nothing is within walking distance so you will need to take a cab.

We did a B2B this past spring, and during the time we were off the ship we took a trip to the Everglades and saw a few gators and had an exciting ride in an airboat etc. It was lots of fun even tho it happened to be a very chilly day there.

We have also done the airboat ride in the Everglades as well -- loved it.
