Can someone tell me where the Nieuw Amsterdam docks in Istanbul or where I can find that information.
I'm wondering if it is possible to walk from the dock to the Spice Market and if so, approximately how long it would take.

All the cruise ships dock along the same area. You can see a map with the cruise ship port clearly marked here:

This website also has great details for seeing Istanbul on your own.
The Spice Market is located approximately where the words "Eminonu" appear on the map. So to get there, you need to walk out of the port, toward and across the Galata bridge (to your left), and the Spice Market is just on the other side of the major road and slightly to your left (coming off the bridge).
I would say, depending on which berth your ship is in and how fast you walk, it would take 20-30 minutes each way.

Yes the spice market is very walkable. Walk on the underneath part of the bridge as that is pretty interesting.
