Is the express check-in sticker really a sticker? We provided all of our info online and our documents don't have a sticker.
Also, if you get upgraded, does Princess issue new documents?

Usually you have a sticker on your document envelope that contains your tickets, etc. Since most everyone uses Express Check-in, maybe they've done away with issuing those types of stickers...
If you've already received your cruise tickets and you get upgraded, they'll adjust them at the pier.

I received an upgrade about two weeks before my cruise and was told the only thing I needed to do was to change the luggage tag info and everything else would be handled at the pier.

You won't get new luggage tags, you just change the cabin number on the tags you have. Your luggage may take a little longer to get to your cabin (it may be directed to a different holding area than your upgraded cabin uses) but it will get there.
