Do the S suites or for that matter any other suites or rooms have hand-held showers?- That is, is the shower head removable from the wall?

Yes, in both the tubs and the showers & in all staterooms.
The adjustable showerhead mount is on an rail, so it can be placed high for tall folks, or lower for shorter people.
...and the temperature regulators work darned well - just be aware that the numbers are the approx water temp in celsius and that if you want the water hotter than 100 degrees, you'll need to push the little red button to be able to continue turning the knob.
