Carib Princess / Western Carib Itinerary. Order of Meals?

We'll be sailing the Western Caribbean itinerary starting 5/29, and we look forward to eating in Sterling Steakhouse and Sabatini's (and maybe even a balcony dinner). Of course, we don't want to miss the "best" of the dining room, so we'd appreciate any info/feedback/suggestions from anyone who's sailed that itinerary re: which nights would be best to eat at the alternative locations. From what I've read here, the Italian Dinner is one that could be missed (Sabatini's instead?)--any others, and which nights do they fall on?
