We are on the Star Princess May 28th. You can board the cruise on May 28th, but we will not arrive in Venice until the morning of the 29th. The cruise actually departs at 6:00pm on the 29th. I'm assuming it's ok to board late, am I right.

You can "catch up" with cruises, I would certainly let them know and be sure you are expected. There is no door bell.

As stated above, it's best that you let them know ahead of time that you aren't boarding until the 29th, so they don't think you aren't coming and give your cabin away.
Happy Sailing!

hypothetically what would happen if you didn't show up and they gave the room away and you showed up at the next port?
I mean you paid for the cabin for the week so it should be there empty if you boarded the ship at the first port of call shouldn't it?

Yes, it would remain open untill after the first port call then it is fair game.
