We leave next week and I was filling out my documents and on the boarding passes I filled out the front, but on the back I filled in our passport information but then realized that was for non US citizens and we are US Citizens will this cause a problem?

No problem mon'. Most of the embarkation stuff is never as serious as it seems.

I would probably not use whiteout but you could put one line through the information and write "error"

I wouldn't use white out on embarkation documents, either. Just explain the error if they ask... It won't be a big deal at all.
