Does Carnival provide 'maps' of the ports you visit? We will be doing Nassau on our own and just wondering if I need to be prepared with my own maps or if we they are provided with your 'daily' port information.

....and they'll sure give you a map of where all the ship sponsored stores are , that's for sure!
For specific information on attractions you're interested in I'd suggest posting questions here, somebody will have the answer

Yes, maps to "Tourist-Trap Amazing-New-Precious-Stone International" stores, where the "super shopper" and Carnival gets their kickbacks from!

Try www.lonelyplanet.com (http://www.lonelyplanet.com) As mentioned already, the provided maps are almost useful, as long as you only want to get to 'Diamonds International'.
