If I remember correctly someone here posted that the formal nights were the at sea days. So I know that the first at sea day on our Mexican Riviera cruise on the Oosterdam is a formal night, but later in the cruise there are two more at sea days so I was wondering which of those would be the formal night? would it be the last night of the cruise or the 2nd to last night?

The second formal night should be the next to the last night at sea. The last night people are packing and if you rent formal attire they want to collect it during the final day at sea. So, for a Saturday departure the first formal night is Sunday and the second one is Thursday.

Basically echoing Duck Tune's info. On Oosterdam, your dress code should be as follows:
SAT - San Diego - Casual
SUN - At sea - Formal:D
MON - Cabo - Casual
TUE - Mazatlan - Informal
WED - PV - Casual
THU - At Sea - Formal:D
FRI - At Sea - Casual
SAT - San Diego - Crying 'cause you have to leave:(

not to beat a subject that has already been covered to death here, but informal, is blazer/sport coat with or without tie? I am renting a tux rather than taking mine on as I just dont want to pack it , trying to reduce the amount I take, I usually pack more than the wife! :D

Yep, for informal HAL suggests that men wear a jacket/sportcoat preferably with a shirt underneath ;) - ties are optional! Renting tuxes through Cruiseline Formalwear (800) 551-5091 is the easy thing to do if you don't want to bring your own tux
