IS there an ATM in the airport in Istanbul?
What about right at the port in Rhodes? Do we need euros when we get off the ship or can we get some right at the dock?
Also what about the stop in Dubrovnik? is there an ATM at that port?

I cannot speak for the other places you mentioned, but there are several ATM's in the Istanbul Airport. We got about 300 euros at the bank here before we left so we would not have to locate one immediately, but finding ATM's was exceptionally easy all over Europe. We were in Ephuses, Athens, Rome, LIvorno, Pisa, Venice, Barcelona and Marseilles. Just be on the lookout or ask. Be careful of the transaction fees. They are often the same for large withdrawals as for small.

There are quite a few (different banks) ATM's just outside customs/baggage claim at Ataturk Airport. There are also currency exchange booths in the terminal (although exchange rate is not favorable).

No problem with ATM's everywhere. In Dubrovnik, you get Croatian kuna, in Turkey new Turkish Lira from your choice of banks at the airport, in Rhodes Euros. In Kotor, Montenegro, they didn't work due to power outage, but it turned out they were using Euros as their local currency anyway, so we didn't need to change any money.
