Can you book a future cruise onboard the Veendam's 7 day Caribbean itinerary? If so, who do you book with and what are the benefits?

You can book future cruises aboard any HAL cruise.
Benefits are that you can book for only $100 instead of the higher deposit necessary when booking ashore - and I believe that you still get a $100 shipboard credit for booking aboard ship, so it's like booking for free!
Should you need to change your travel plans, you have 4 years from the date of deposit to use your deposit towards another cruise - and of course you can switch your reservation to your TA.

You will need to see the Onboard Cruise Consultant in order to make your booking. He/she will be able to provide all the details you are looking for. The desk hours of the OCC will be listed in your daily program, as well as the desk location.
I booked while on the Zaandam a couple of weeks ago, and think it's a wonderful program!

The shipboard credit depends on the type cabin you book and the length of the cruise.
7-11 days: Inside & outside $25 pp s/c; Verandah $35 pp; Suite $50 pp
12 days+: Inside & outside $50 pp s/c; Verandah $75 pp; Suite $100 pp
We did the future booking on the Veendam in Dec and then booked a cruise in January with our TA. This is so new to HAL reps that our TA had a little bit of trouble with them crediting us the deposit - they did not know which department was handling these Future Cruise deposits. Hopefully, now it will be easier.

can book for $100.00 (I guess non-refunable), but the HAL cruise consultants told me that insurance is due at the trime of booking, that would be another $600.00 for two persons at a $2,500 cabin rate (Platinum). So, the deposit would be $700, not $100.00?
Please explain the insurance?

Yes, the $100 is non-refundable, but you have up to 4 years to use it on a future HAL sailing.
Insurance is not necessary to purchase at deposit time - and there are other insurance providers besides HAL.
