So how are the shows on the HAL Alaskian sailings I noted that we are in some ports until 10pm How will that effect the dining room and evening shows?

If you plan to be at port during your regular dining time you can either do room service before or after, eat at port, or the hours for the Lido Buffet are extended. I forget whether or not the show times are adjusted on those days, but generally the better shows are on the days when there are not lengthy port calls.
As to the quality of the shows, that seems to be something that people have very different opinions on, so it seems to be a matter of personal taste how much you will enjoy them.

Usually when you are in port that late you not have a production shows. Count on just the regular entertainment like comedians and singers, etc. There could even be an evening BBQ/Salmon bake by the pool. You won't find a lot of activities because they expect most people to be gone from the ship. The casino and on-board shops won't open until after the ship leaves the ports.
