It seems to be that a Category C room is better than a Category F room on the Zuiderdam. Although on CVC, it costs more for a Cat F room (Sept 4th Sailing)? Anyone have any insights into this or is F a better room than C?

Lithium,
I would go for the category C. The only advantage to category F is that it is located on higher decks. There are two on the upper Promenade in a decent location and two on the upper Verandah, at the very front of the ship.
The C rooms are on the main deck, which is the lowest. But the mid-ship location makes them desirable.
As to why a higher category is less money I don't know, but it happens often. On my October cruise the category NN rooms (lowest category available) are actually more money than the verandahs. Don't question it, just take advantage of it.
