What are the chances that the airports in south Florida (miami or FLL) will be open come Sunday morning?

IMO....depending upon the damage, of course, I would think the chances are very good the airports could be open. IF there is little damage, it is more likely the airports could be open but the same as when we have snow storms up north, much of the aircraft has been moved out to keep it safe. It will take a number of days to get air traffic back to Southern Florida back to normal as airplanes will be out of its their normal positioning.
