From HAL's web site:
Special dietary needs, such a vegetarian, diabetic or gluten-free meals, are easily accommodated with advance requests. Kosher meals and a Health Conscious Dining option are also available. To arrange special meals, please contact the Ship Services Department at 800-541-1576 at least 60 days prior to departure.

I have to say I was really impressed with HAL's attitude toward gluten-free requirements. We sat next to a Celiac at breakfast most mornings, and were surprised to see they even provided gluten-free muffins. Mostly, folks get eggs, bacon, no toast - but the daily muffins were a real treat for this gal, and they were BIG too.
