We are cruising on the Zuiderdam in February to the Panama Canal etc, is there a specific site where I can learn more about the cruiseship, Captain, entertainment, dinner schedules etc. ? This is our 4th cruise but have mostly cruised Alaska in the past....Thank you for any information you can give me or tell me how to search for it.

Well, this site is about as good as any for information on all things cruise related!
A good starting point is Holland America's own website: www.hollandamerica.com. There's info about the Zuiderdam, including deckplans and Virtual tours of the ship. If you haven't already done so, pick up a Holland America Panama Canal brochure - there are lots of specifics contained within that, particularly the last three or four pages.
Other than that, a quick Google Search can help! Best of luck :)

You could look to see if there's a roll call thread (http://boards.cruisecritic.com/forumdisplay.php?f=325)here on the boards for your particular sailing -- I bet some folks sailing with you could answer some of your specific questions.
The Ports of Call (http://boards.cruisecritic.com/forumdisplay.php?f=5) boards are great sources of information about the ports, too.
