Can someone walk me through the process of checking in? What docs are a must, what is the order of boarding (numbers, order of check in ???)

Beebob--glad to help a bit--Welcome to HAL and the HAL board! :)
Regarding documents, you will want to have immediately available your cruise contract/vouchers, which will be in a check-book sized bound booklet. Sometimes HAL will consolidate such documents for a couple into one booklet; other time you and any cabin companion will each have a separate booklet.
Also, you will need your passport.
You will need a credit card (if you have not completed your check-in online at HAL's website.)
You can complete your check-in in advance on HAL's website. If you elect to do that (and I highly recommend that you do so) it CAN speed up your check-in at the pier. The on-line check-in allows you to fill out all immigration and credit card information. Be sure to print a copy of your on-line immigration forms and check-in docs in case there is a glitch in the computer system at the pier. If you don't do the on-line check in, then you will will have to fill out the immigration questionnaires that come with your cruise document packet and the credit-card authorization form and also provide a credit-card.
At check-in at the pier, HAL will also ask you to fill out a quick health-survey, which is a screening survey to guard against the people with norovirus symptoms boarding the ship.
As far as how you will be processed at the pier depends entirely on how many others are present for embarkation at the time you are. Our experience has been that the earlier we have shown up, say between 11:30-1pm, the longer the wait. When it is crowded, HAL gives everyone a group number card. They call the numbers in order and your group proceeds to the check-in line. When this has happened to us, our number usually has been called within 30-40 minutes, sometimes less. The exception is for guests who have booked a Deluxe Verandah Suite (Cat SA, SB or SC) or a Penthouse Suite (Cat PS)--they go directly to the check-in desk. When we have shown up after 1:30pm, we usually have been able to proceed directly to the check-in counter and are onboard within 10 minutes. Again, that has been our experience after a number of HAL cruises. Others may have had different experiences and I'm confident that they will share theirs.

If you are in a group line you will be escorted onto the ship and directed or escorted to either the Lido or the main dinning room for lunch and to wait until it is announced that the cabins are ready.

If you are in a group line you will be escorted onto the ship and ...The only time we were ever escorted, from the check-in room to the gangway, was in Copenhagen. (We don't book suites.)

Thanks Bill :D that was the info I needed. From a newbie to HAL, hand holding is just what I needed. It is great to see someone takes the time to break down step by step. Very close to what DCL does but each line is different.

If you wish to have a sit down lunch, the main dining room will be open from Noon until 1 PM.
Otherwise you can have a buffet lunch in the Lido.
Cabins will be ready about 1:30 -- an announcment will be made -- and then you can go to your cabin.
