Local Currency on Shore Excursions

How do you handle shore excursions and local currency? We are going on a Western Carribbean cruise with ports of call in Mexico, Honduras, and Belize. Are the local merchants expecting you to buy in local currency? If so, are there money-changers at the port or would it be better to bring some with you (exhanged before embarcation)?
