Local Currency on Shore Excursions

How do you handle shore excursions and local currency? We are going on a Western Carribbean cruise with ports of call in Mexico, Honduras, and Belize. Are the local merchants expecting you to buy in local currency? If so, are there money-changers at the port or would it be better to bring some with you (exhanged before embarcation)?

Most accept dollars. In Roatan if you go way off on the east side, they pretty much use lipiras, but on the west end dollars are no problem...

Just don't try to buy a $3 item with a $100 bill, or you will get local money as change....try to have some smaller bills ($10's, $20s,) for those little purchases.
