Because you need a SUMMER cruise, your choices are limited.
You might consider a RCCL cruise on Oasis or Allure. Lots for children to enjoy on those ships. :)

You might want to consider going back to the ship once you are finished with the Dolphin excursion to enjoy a less crowded ship.
By trying to do too much in a port, you never enjoy anything fully....
