Default What is closed during siesta?

Any observations on if restaurants, museums, etc are closed during siesta time in the afternoon? Mainly interested in the Old Town area
Or is everything open to take advantage of the tourist business?

Yes, when a ship is in town mostly everything touristy should stay open. Banks and offices do close for a couple of hours though.
