We were approached numerous times when eating in the MDR or sitting in a public area by a young make soliciting reservations, so it would seem they had plenty of capacity. Maybe others who have more NCL experience can say whether that's normal or atypical.
You are absolutely correct they were rarely full at Le Bistro on the Majesty. The person soliciting reservations(drumming up business) changed from day to day, sometimes it was one of the waitresses and sometimes it was one of the waiters/busboys.

On the larger ships, sometimes they are full and sometimes they aren't. On the Gem its the Italian restaurant which is the most difficult reservation(when it was free any way). Cagneys is sometimes full but if you are willing to go early or late most of the time last minute reservations are more likely available then not.

no I think when they announce a general price increase for the paid dining rooms they should give 60 or 75 days notice somewhere. Then no one would be able to cancel without penalty anyway(but not the suites who should just suck it up..)

Default restaurant increases

I was on the Sun in October and paid $79 for the romance package. I can't see how they can justify increasing it so much. I guess it was popular, so supply and demand. Le Bistro was $15 and the steak restaurant was $25. I can't imagine spending $30 now. I guess I will just eat once in a specialty restaurant. The wine prices are overpriced, but I guess since the cruises are very reasonable, they have to make their money somewhere. If I remember, the cheapest bottle of wine was $28. It is better to carry the wine on and pay the corkage, but carrying bottles is a hassle to me.
