To seriously answer your quiry, try any number of places. Mexican chicken and rice dishes are different from Caribbean chicken and rice dishes. Plaza Leza, Casa Denis, La Choza for example, all in San Miguel, will give you a good example of how Mexicans do it. Try the moles.
