Default Excursion availability
I know its cheaper/better experience to book excursions privately. I have my reasons for wanting to book through the cruise ship. Anyhow if an excursion is showing only 1 ticket left on-line do more tickets ever become available once onboard the ship?

Yes, sometimes people cancel excursions before or even after they board. I'd keep watching the excursions from now until you board.
