recipe for RC spinach dip

I tried the spinach dip for the first time on our last cruise and surprised that I liked it, as I am a picky eater and would never eat spinach. I would like to make some and was wondering if someone out there has the recipe and would share it. Thanks.

Well, if you like it, you could probably do as my wife did for another dip--ask the staff. She got a printed list of ingredients. Quantities were missing, so there will probably have to be some experimentation. She was also informed that the smallest unit they use is a gallon!

 

Sort of like the recipe for moose and rabbit stew:

 

Dice one moose etc

I have a great recipe, but don't know exactly what I did with it.......however, here is a link to some recipes.

The first one is similar to mine, except I didn't use cream cheese or mayonnaise.

I know I used fresh spinach, artichoke hearts, cream, and jack cheese.

Pine nuts are an optional item, but good.

Most, if not all spinach-and-artichoke dips are the same or similar. (You need the 'chokes.) I had this on the Majesty and it was fine, but no better than anywhere else, really.

 

My sister makes it with a box of thawed/drained chopped spinach, sour cream, cream cheese, parmesan cheese and canned artichokes. Mix it all up. Serve with chips. FABULOUS.

Hi Pat,

 

Diana and I were on the same B2B with you in Sept.

 

We enjoyed the dip (and the trip:)) so much that we booked a B2B2B for next Sept. 13th, 17th, and 20th.

Hi Tom, So you are doing a 3 B2B. enjoy it as I'm sure you will. My sister and I got on the Sovereign, before it left Fl. and was on it for 5 sailings straight. It was great but then we had to come back to reality.:(

The one I have on their ships is actually a warm Spinach/Sweet potato dip served with Tortilla chips. ;)

My favorite appetizer.

I have two of the cookbooks and it is not in either of them. :(

EDIT: It was always called Spinach/Sweet potato dip before. Now I looked on a menu and it is just called Spinach Dip. ??

Here it is, and I think it is wonderful, better than any other. My opinion:)

 

Hot Spinach Cheese Dip

 

1 can 13.75 oz. quartered artichokes hearts, rinsed and drained

2 green onions, chopped

1 garlic clove, minced

1 T. butter or vegetable oil

1 bunch fresh spinach, rinsed, trimmed, drained and chopped.

1 1/2 T. flour

3/4 C. whipping cream

1 1/2 C. shredded Monterey Jack cheese

1/4 C. grated Parmesan Cheese

1 T. pine nuts (optional)

Salt and pepper to taste

Tortilla chips

 

In a large skillet, saute artichoke hearts, green onions, and garlic in melted butter, stirring often, 2 to 3 minutes, until onions are limp.

Add spinach and continue cooking 1 minute, until cooked down.

Stir in flour and cook, stirring 1 to 2 minutes.

Gradually stir in cream and heat until mixture boils and is slightly thickened.

Stir in Jack cheese, Parmesan cheese and pine nuts.

Heat just until cheese is melted. Do not boil.

Season to taste with salt and pepper.

Spoon into a heat-proof serving dish and serve with tortilla chips.

Make 4 to 5 servings.

This is the recipe that is in the Savor Vol.3 - Not sure if its the one your looking for...

 

Artichoke and Spinach Dip

 

1 teaspoon extra virgin olive oil

1 medium yellow onion, diced

3 cloves garlic, chopped

12 ounces baby spinach, shredded

1 cup ricotta cheese

1 - 8 ounce package cream cheese, softened

14 ounces thawed, frozen artichoke hearts, chopped

salt and freshly ground white pepper

1 cup cheddar cheese

 

Preheat oven to 350.

For the dip, in a saucepan over medium heat, warm oil and saute onion and garlic for 4 minutes. Do not brown! Add baby spinach and saute for 2 minutes.

Remove from heat and stir in ricotta and cream cheese. Mix Well.

Add artichokes and season with salt and pepper.

Divide mixture equally into oven-proof serving ramekins.

Top with cheddar cheese and bake for 15 minutes.

Serves 8

Unless your baking you should not have a problem with dividing it by 16 to get a cups worth. Like I said don't try this with baking recipe's.
