If they have it onboard already, and it's not something more expensive than the standard issue bottles, I've always found it not to be a problem. You should have no problem with Pimms- they're most likely saving some money on providing it vs other options.

I know you can normally get bottles not on the list, eg my husband always asks for and gets cognac. Would I be pushing my luck asking for a bottle of Pimms?

Should be pretty easy. You'll get a list to circle for your choices. You may add others. For Vodka, we got Grey Goose. The butler, Lily was extremely accommodating.
