Plenty of options. Tel Aviv Jaffa, overnight in the north. But more than that Jerusalem, with all the respect to the shore excursions offered by the cruise companies, they don't even scratch the surface of this 4000 years of history city!

I don't know your background or likes or dislikes, but I here are a couple of suggestions. One is Galilee and the city of Safed (known as Tzefat in Hebrew) and the other is the northern coastal area including Akko, Caesarea, and Rosh Hanikra.

 

If you want to make a nice trip a couple hours south to the desert, you could go Mitzpe Ramon. We haven't been, but that is on our itinerary for our trip this summer.

 

I am sure others have other suggestions.

If you like history and ruins, Caesarea is a good visit (and beautifully situated on the sea....). Beit Shean is also a great site (ancient Roman city).

 

Tel Aviv & Jaffa also makes a good day trip.

 

But I have to agree with Talia that Jerusalem has a lot to offer, much more than you can see in a few hours.
