Default Rooming for one couple & another person

How do people do the room arrangement when there is a couple and an elderly person? Do cruise lines allow one person in a room alone or would all three need to be in one room?

You can do either. Many, many cabins can accomodate a third (or fourth) passenger. Indeed, every mini-suite has such capacity, though they do not book every suite as such. When the cruise hits a critical number, (and it can even be parsed out to sections of the ship due to lifeboat capacities), they stop selling triples and quads.

If the third person is elderly, then a pull-down bed might not be the best option, so the fold-out sofa of a mini may be just what you need.

Your question implies that the elderly person may also be moderately disabled.

If that is the case, then call Princess to ask about their policy. If not then it is your judgement whether that person can room independently.

If, however, you wish to be in the same room, then I would suggest you look into a minisuite.

Some of this decision also depends upon your pocketbook. A person sailing single in a room will pay the going rate plus the "single supplement" which is usually double the per person price for two in one room although you can rarely get a deal which is a bit lower. The third person in a room will be a bit less than the rate for the first two people. In a standard cabin - all cabins lower than a mini - the bed for the third person will require that person to climb a ladder to get into bed. Only you know if the person you are sailing with can do that.

If the elderly person is able to care for themself, you could either get a cabin that will accommocate a third person, or get two cabins. One for the couple and one for the solo. Note that most cruise will sharge a single supplement if some one is alone in a cabin

Note that if you book a regular cabin (not a mini-suite) for three people, one of those will be climbing a ladder to a bunk bed. While comfortable, it's not the best arrangement for older or elderly passengers. This is why people are recommending booking a mini-suite.

Default Regular Cabin for Three

In the non-Mini-Suite cabins with the bunk beds, I believe the lower bed must be split into twins, i.e. it cannot be a queen size configuration as it interferes with the ladders for the bunks.

If this is an acceptable solution, the elderly person could sleep on one of the bottom twins.

Just offering this if cost of the mini-suite is too high.

Good choice. You'll have the larger bathroom and more storage. There's also more seating during the day because the couch is made up.

Not true. There are plenty of families who cruise where the parents have the lower bed as a queen size, and the kids take the bunks. They just put the ladders in a different place.
When I cruised with my son & his girlfriend, the lowers were made up as a queen when we got there. However, having paid for the cruise I was not climbing up to the bunk, and asked the cabin attendant to split the lower beds!

In some cabins, the third person sleeps on a sofa bed. Check the symbols on the deck plan, which will indicate whether the third/fourth berths are Pullmans (fold out of ceiling or wall) or a sofa bed.
