We had a similar experience on Celebrity, the Infinity actually, as you. The food selection and preparation is superior to HAL, hands down. The lackluster, robotic service, however, detracted from the dining experience. Also, we sailed on her on her first voyage after "solticizing" (dry-dock); never, ever again, no matter the line! The experience surrounding this fiasco was enough to move Celebrity to afterthought status for us when looking for our next cruise. This criticism is directed at Celebrity's management rather than the Infinity's staff itself though.

That said, as you were, we were pleasantly surprised at how, on 9 out of 16 nights, the executive chef and maitre 'd, as well as other chefs, visited our table and engaged in conversation and a QnA on the food, it's taste and presentation, etc. I was impressed at their obvious interest.
