I've never seen a gentleman in a tux, usually either a suit or sport jacket,slacks and tie. Some wear string ties and there was one misguided male who wore t shirt and shorts - he didn't have a clue!! He wasn't denied dinner though!!
The ladies wear anything from shiny, sequiny things to "casual resort" pants suits to a nice pair of black slacks and pretty top. Don't think I've seen an long evening gown but expect they've been worn sometimes.
In other words it's nice to dress up in whatever makes you most comfortable - but please avoid t shirts, shorts and jeans!!

Looks like you'll be on a big band cruise. Should be VERY nice. Enjoy the music, the plantations and especially the formal dinners!!
