Snorkel spots

We live in the Houston area and are going on our second Voyager of the Seas cruise. We have been on 5 Royal Caribbean cruises and many others.

My husband and I have never been to Roartan and Belize, any recommendations for great snorkel spots or excursions? What beaches are best for some snorkeling. Would appreciate your comments. Can't wait to get to a beach for some sun.
