  1. It's probably not boiling, but the hot water is dispensed from those large coffee urns that coffee is served from. It's just an additional spigot on the urns.

  13. I have never done it, but be aware that it is not a Chef's Table in the traditional sense. A traditional Chef's Table would be in the kitchen, and the menu would regularly change based on the availability of fresh ingredients along with the chef's desires in terms of what he/she wanted to make. Royal's Chef's Table does neither of those.
