How/when do you find out where your To Be Assigned room is ? Have never done one of these and was wondering how this works. Luggage tags also, "TBA". How will my luggage know where to go ?

Anyone know how many formal nights there are on a 14 day Journey cruise ? What about main dining room menus ? We've been on 7 or 8 day cruises before but 14 days is all new and not sure what to expect. Can't wait !!
