Please assist with DIY Santorini Cruise ship stop in July

Please assist my DIY tour plan, I gathered the info from the forum. Our ship would be in port from 2 pm to 10 pm, we (2 adults and 2 kids) plan to take the tender to Old Port in Fira:

- my understanding is that I should be able to find the "speed boat" ticket vendors in Old Port, and transfer to Amoudi Bay. Is this correct? If so, how much is the cost of the transfer?

- once arrived at Amoudi Bay, find vendors for transport packages to Oia and to Fira. Is this correct? If so, how much is the cost? Would I be able to spend time in Oia as I will, instead of following a shuttle schedule?

- should I forget about going to Santo Winery for the view (distance and time constrains)? If we are not into wine tasting, is it worth the visit just for the view?

I am open to any other suggestion. Thanks for your assistance!
