Haven't been but I've also been looking at options for kids, mine are 12 and 10.

There are museums focused on Leonardo Da Vinci which include some of his "invention" work and it sounds like it more hands-on.

Glass factory demo?

Vaporetto ride?

Ours, 6 + 9, enjoyed the glass blowing demo's on Murano. Also the vaporratto (bought all day passes so could jump on and off). Watching the boats on the water. Venice is very crowded mid summer.

Agree that just taking a vaporettto (water bus) around is fun, and if it's fun for an adult, it should be for a kid, too! Just make sure you know there's a difference between the white ACTV vaporettos and the yellow Alilaguna boats. They require separate tickets,

which you can almost always purchase from a machine near the vaporetto stop. You can be caught and fined if you take one and don't have a ticket for that particular boat line. This pertains particularly if you have purchased a day ticket on one line.
