Tipping at Mr. Sancho"s

We were this last week. We chose to tip at the end of the day. I'm not sure if it's like this for everone but it seemed you are assisgned a server for the day. Which makes it much easier to tip before leaving. At the swim up bar, I'd maybe tip while I go.

6 ships is about average for Cozumel; they do limit the number of visitors - can't tell you what the number is. If you are concerned about crowds check out Nachi Cocom, which limits itself to130 guests per day.
