Help with excursions - diverse group

We are on the Splendor in June and go to Cabo, Mazatlan and Vallarta. We have my parents (ages 67,68), 2 20 year olds, a 16 year old and 4 40 (something :)) year olds.

 

Suggestions for excursions? We are not drinkers. I do not want to be cooped up in a van all day. Thinking maybe a private boat sail/snorkel at one port, maybe day pass to a resort, maybe open aired vehicle tour? Not really sure. Would love to sample local cuisine, get some beach time ( but not each port), and maybe see cool towns.

 

Any help would be appreciated!
