Independence - Specialty dining

OK, booked my first ever RCL sailing on Independence. Could anyone please advice what the specialty dining options are, what are the fees and how good are the individual restaurants?

Any other hints and tips are gratefully received. Thanks in advance.

Indy has Chops (steak house) and Giovanni's Table (Italian). Another is coming in the upcoming dry dock, but I forget if it's Izumi (Asian) or Sabor (Mexican).
