Snorkeling and SNUBA on cruise to Southern Caribbean

We are going on Freedom's southern Caribbean cruise in February, making stops in Antigua, St. Kitts, Barbados, St. Lucia and St. Maarten.

 

My kids originally wanted to do the swimming with dolphins on St. Kitts and Stingray City in Antigua. Though we haven't ruled those out, we are looking into doing more natural animal encounters. Stingray city caught my attention because it was snorkeling off a beach and you could get to a reef gradually getting into deeper water. My crew are a little nervous about being brought to deep water to snorkel, so I think they would like to snorkel off beaches, giving them the option of how far out to go.

 

Of the places listed does anyone have recommendations of snorkeling sites/tours that have beach access and great clear water with the likely hood of seeing some great sea creatures.

 

Also, we are thinking of doing SNUBA on one of the islands - any thoughts on that would be great.
