What to do post hurricane?

Nothing wrong with your original plans. Plenty of taxis and buses to take you to Maho, the bars/restaurants on the beach are up and running, and the planes are coming and going. You will notice large rocks instead of sand over about 1/3 of the beach at the end closest to Sunset Bar and Grill. Also, the number of large planes is less than it was pre-hurricane, but you can still see them. Other than that, "it is the same as it ever was".

 

As for a beach itself without the planes, try Mullet Bay - a 15 minute walk from Maho. You can easily combine both and get a perfect beach and the thrill of planes all in one day.
