What options are available other than buffet?

I don't know about Freedom, but the Dream has a pasta restaurant (Pasta Bella, I think) above the Lido buffet. Most people don't know about it until later in the cruise, so it makes for a more relaxing embarkation lunch. Unfortunately, and unlike NCL, the main dining rooms are not open.

Freedom doesn't have that. They do have the BBQ place up there which is less crowded than lido.

On Conquest-class ships like Freedom, there is a deck above the lido at the aft where there is a lunch option. It was a different menu back when we sailed, but whatever they have now is likely open for lunch.

Most of the venues on the ships other than the MDR and the Steakhouse tend to be open on embarkation day for lunch. Some ships even have venues that are open for lunch and not for dinner. If you go to the Carnival website, select your ship, then look through the dining options, it will tell you which are open for lunch and some may even have menus so you can start deciding where you want to head first and what you don't want to miss during the cruise.
