Off the beaten path excursion suggestions in the caribbean?

We will be visiting St. Thomas and St. Maarten in a few weeks. Do you have any suggestions for off the beaten path excursions or things to do?

For example: in HI, we booked a hike on the volcanoe with a picnic lunch through a private company and while in Roatan, we booked massages and lunch through a pvt business. I found both of those suggestions on this site. Thanks in advance if you can help with ideas!:)
