Making Speciality restauraunt reservations on Seaside

I see they have the packages , but what if we just wanted to make a reservation for the Steak house ?

 

Do we have to wait until we are on the ship ? i dont see where we can do it on their website

 

If it matters we are staying in the YC ( do we just book thru the concierge ? )

can only book on board - just ask the YC concierge to book for you - or u can go direct to the restaurant (as they are literally right outside the YC on deck 16) - and make the reservation on your own....
