Is OSJ Culinary Tour do-able before embarkation?

My wife and I will be flying into SJU the afternoon before our cruise.

The ship departs at 8:30 PM the following day.

 

We were thinking of taking a culinary tour of OSJ that goes from 10 AM to 1:30 PM on the day of the cruise. We would check out of the hotel and ask them to hold our bags, take the tour, return to hotel, and then take taxi to the pier.

 

This would seem to work. Anyone have any other suggestions? Any reason why we should forego the tour and just embark earlier?
