Cajun/Creole Cooking School

Hi, I'm chasing advice on a hands on cooking school to learn Cajun/Creole in NOLA.

I've found ones where you watch the chef do everything and have a meal etc at the end.

I cannot seem to find one where you prepare the meal yourself at the same time the chef is.

We will be in NOLA for 4 days and want to dedicate a half day/full day doing this.

Just as a warning, you won't find much authentic Cajun cooking in New Orleans.  More Creole than Cajun.

 

Authentic Cajun cooking is found in Cajun Country of South Louisiana.

If you would like to learn about Creole cooking, a great way to start is with La Bouche Creole. It is a cookbook by Leon Soniat, first published back in 1981 and still in print. It captures the European/African roots of the cuisine of New Orleans with lots of local classics. The recipes are easy to follow, but success depends a lot of the fresh seafood readily available in this area.
