Help Highland Oatcakes

Staffordshire Oatcake are the same size and thickness of a pancake. They are made from oatmeal and wheat. You fill them with bacon; and/or cheese; sausage then eat them like a wrap.  They are a local speciality in Stoke-on-Trent and Staffordshire.

I have just found out that the novelist Arnold Bennett mentions oatcakes in his novel 'These Twain'

I assume Staffordshire because his books are set in Hanley and Burslem. Which are 2 of the 6 towns that makes up Stoke on Trent.

Cheese and chutney.  Smoked salmon and a dab of creme fraiche.  Pate.  Even caviar, just like they did in grannie's heilan' hame.

Hi folks, don't forget the Derbyshire Oatcake.  Similar to the Staffordshire oatcake but thicker and softer, a bit like a flat crumpet! Quite delicious toasted and spread with a little butter or cheese.
