NCL Gem in February-What to do?

We are a group of 6 stopping at St. Lucia from 8am -5pm.  We would love to explore the island a little and/or go to the beach.  Any suggestions?

Explore the island!  Very different than much of the Caribbean, more scenic and lush, etc.  

A typical day tour includes banana plantation, Marigot Bay, Pitons, volcano, mud baths, waterfall and beach time.  Plus food and drink, entrance fees, etc
