Does Carnival celebrate Hanukkah on ships?

Does Carnival do anything for guests who celebrate Hanukkah? Royal Caribbean did a great job-  potato pancakes / lit a menorah.

They did when I cruised the Miracle. Someone volunteered to speak and  wine, chocolate coins and other items were provided. The menorah was electric.

Yes, Hanukkah along with Passover, Rosh Hashanah & Yom Kippur are observed onboard Carnival.

The founder of Carnival cruise line was Jewish, born in Israel, severed in the British Jewish Brigade in WWII and then in the Israeli military before coming to the US to found NCL and then CCL.

I've seen a menorah on Carnival ships before. I'm glad to see they offer something for our Jewish brethren.

Yes, we have  celebrated many Jewish holidays aboard.  Several times a Rabbi has been on the ship as a fellow passenger and lead services.
