You do not have to fly in the same day.  I am uncertain about selecting first or business class.  I do know that once you have paid carnival and your flight is considered “ticketed” instead of held, that people are able to go in and upgrade their seats or apply frequent flier numbers.

It is not considered ticketed until 30 days or less before flight, but seats are assigned at booking.  You can fly business.
